Things You Need

Chicken Thighs - 4 lb (with skin and bone)

Black Pepper - 1 teaspoon (Fresh Grounded)

Cayenne Pepper - a pinch

Minced Garlic - 6 cloves

Oregano - 1 tablespoon (dried)

Fresh Oregano (chopped)

Lemon Juice - 0.5 cups

Salt - 1 tablespoon

Rosemary - 1 teaspoon (dried)

Russet Potatoes - 3 

Olive Oil - 0.5 cups

Chicken Broth - 0.5 cups


How to Make Chicken Thigh Dinner with Lemon and Potatoes



First of all, you need to pre-heat an oven to 220 Celcius before starting your recipe. 

Then while it is being heated, take a roasting pan and coat the surface lightly with oil.

After that put the chicken thighs into a large bowl and put oregano, salt and pepper into it and mix well. Then put the cayenne pepper and rosemary into the mix and give it a good mix again.

Then add some lemon juice to this mixture and make sure the chicken thighs are well coated with the mixture. You can then add the olive oil and the garlic into it. and mix again.

Then you can add the potatoes into this bowl and mix well until both the potatoes and the chicken thighs are coated.

After that you can place the chicken pieces and potatoes on the roasting pan (except the remaining mixture) and pour the chicken broth over the pieces. Then apply the rest of the mixture onto the chicken and potatoe pieces.

Now you can place the roasting pan in the oven and bake for about 25 minutes. Then you can toss to the other side of the pieces and cook more until the chicken turns a golden brown color.

Then remove the chicken pieces onto a plate and setyour oven to the maximum heat and heat the potatoes in the marinade until they (potatoes) become caramel. This would take about 4-5 minutes. Transfer this onto the plate with chicken thighs.

Finally, place the roasting pan again on medium heat and put some chicken broth onto the remaining marinade on the pan. Stir the remaining marinade well in the broth and heat it for about 5 minutes. Then finally you can apply this chicken broth marinade juice on top of the potatoes and chicken and top the final dish with oregano.
