How to Make Watalappan at Home Easily

 



A classic Srilankan dessert! This delicious dessert is made with a handful of ingredients spiced with cardamom, cloves, and nutmeg. The main ingredient is jaggery. This is a traditional dish served in weddings, festivals, and feasts in Sri Lanka. A very tasty coconut custard pudding type dish mixed with sweet jaggery will make your craving for this dish skyrocket. It is one of the precious desserts of every Sri Lankan. But this dish is not only for this particular country! You can now make a very delicious dish of dessert for your loved ones with us. 




Things You Need

Eggs - 5

Kitul Jaggery - 250 g (or brown molasses sugar)

Coconut milk - 1 cup (canned)

Cinnamon powder - 0.5 teaspoons

Pinch of salt

Vanilla - 1 teaspoon

Cashews - Roasted to garnish

 Nutmeg powder - 0.5 teaspoon

 Clove powder - 0.25 teaspoon


How to Make Watalappan 



First of all, you need to break the jaggery into pieces. If the jaggery is too difficult to break, just put it whole into the pan. After a few minutes of heating in the cooker, you will be able to break it into pieces.

Then you can heat the jaggery/brown molasses sugar only until it is melted. Make sure you don't overheat.

After that, you can add coconut milk to the pan.

While it is being heated put the eggs to a bowl and beat the eggs well till it becomes frothy.

Next add the heated coconut milk-jaggery mixture to the eggs, little at a time, while beating continuously. Make sure not to add the whole mixture to the eggs all at once, since this will curdle the eggs.

Then you can strain the mixture before adding it to a dish.

Next transfer the mixture to a heat-proof bowl or pan. And then you can add the cashew nuts. Now you can cook the Watalappan mixture either on the stove or oven.

You can cook on stove until it partially solidifies to a custard pudding texture.


Cover the bowl with aluminum foil if you are going to bake in an Oven.

Fill the mold only up to 3/4 volume to prevent overspill when steaming

Bake at 375 F for an hour.

Strain the mixture before adding it to ramekins or a baking dish.
